Lemon- Honey THC infused frozen yogurt bars are a sugar free edible you won’t feel guilty about!

Makes 6 popsicle bars at an estimated 30-40mg THC each

Infused olive oil:

2g Cannabis Flower

25g extra virgin olive oil

.25g Sunflower Lecithin

Yogurt Mix:

70g Honey

450g Greek Yogurt

Zest of 1 Lemon

Infused Olive Oil:

1.Start by decarboxylating the flower for the infusion. I use an Ardent Nova which automatically decarb’s with the press of a button. You can alternatively grind the flower, put it on a sheet of aluminum foil and fold it into a pouch with the herb inside. Put the foil pouch inside an oven proof baking dish with a lid. Bake at 240 F for about 45 minutes. Remove the foil pouch and allow to cool to room temperature before opening. It should look toasted and smell very fragrant.

2. If using a device like the Ardent or Levo you can put the extra virgin olive oil together with the decarbed flower and run an infusion cycle. You can alternatively put the oil and decarbed flower in jar and place in a pot of barely simmering water. Allow to infuse for 1-2 hours stirring every 15 minutes or so. Strain the flower solids out and you now have infused olive oil.

The Mix:

1. Add the honey and sunflower lecithin into the jar of infused olive oil after it’s been strained. Heat the mixture in a pot of simmering water until the lecithin fully dissolves. Remove from the water and cool to room temp.

2. In a bowl, stir the honey & oil mixture with the yogurt and lemon zest until evenly mixed.

3. Spoon the yogurt mixture into the popsicle molds. Gently bang the mold on the countertop to help the yogurt settle evenly and remove any air bubbles.

4. Insert popsicle sticks and freeze the yogurt pops at least 3 hours before serving.
